Hi Isla, growing herbs indoors is a great, cost-effective way to have fresh herbs on hand all year-round. I always recommend herbs as a great place to start for beginner gardeners as they are pretty hardy plants. These would be my top five herbs to grow indoors in pots:

1. Basil: Loves lots of sunlight and is perfect for pasta, salads, and pesto. Make sure it gets about 6 hours of sunlight a day.
2. Mint: Easy to grow and great for teas, desserts, and cocktails. Just keep it in its own pot, as it tends to spread quickly.
3. Parsley: A versatile herb for soups, salads, and garnishes. It can handle lower light conditions but prefers some sun.
4. Thyme: Needs lots of light and adds a wonderful flavor to roasted meats and vegetables. Trim it regularly to encourage growth.
5. Chives: Great for a mild onion flavor and grow well in low light. Snip the leaves as needed and they’ll keep producing.

When it comes to watering, keep the soil moist but not waterlogged. Overwatering can lead to root rot!
